Warm Beet and Onion Skillet
Roasted beets and onions finished in a skillet with vinegar and herbs.

Ingredients
4 medium beets, peeled and cubed
2 yellow onions, wedged
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp chopped parsley
Salt and black pepper
Instructions
1. Heat the oven to 400F.
2. Roast the beets and onions with the oil, salt, and pepper until tender.
3. Transfer to a skillet over medium heat.
4. Add the vinegar and parsley and toss briefly.
5. Serve warm.
Tips
Windridge original. This is a sturdier beet side than a salad and works well with roast meat.
