Tomato, Cucumber, and Sweet Pepper Panzanella

Ingredients

4 large tomatoes, chopped 2 cucumbers, chopped 2 sweet peppers, chopped 4 green onions, sliced 4 cups crusty bread, torn 1/4 cup olive oil 2 tbsp red wine vinegar 1 clove garlic, grated 1/4 cup basil Salt and black pepper

Instructions

1. Heat the oven to 375F. 2. Toast the bread until lightly crisp. 3. Combine the tomatoes, cucumbers, sweet peppers, green onions, and basil in a large bowl. 4. Whisk the oil, vinegar, garlic, salt, and pepper. 5. Add the bread and toss with the dressing. 6. Let the salad rest 10 minutes before serving.

Tips

Windridge original. Day-old bread is better here than fresh bread.
