Swiss Chard and Leek Gratin
Swiss chard and leeks in a light cream sauce with a crisp top.

Ingredients
2 bunches swiss chard, chopped
2 leeks, sliced
2 tbsp butter
2 tbsp flour
1 1/2 cups milk
1/2 cup grated Parmesan
1/2 cup breadcrumbs
1 clove garlic, minced
Salt, pepper, and nutmeg
Instructions
1. Heat the oven to 375F.
2. Cook the swiss chard until wilted and set aside.
3. Cook the leeks in the butter until soft.
4. Stir in the flour, then whisk in the milk.
5. Season and fold in the swiss chard.
6. Transfer to a baking dish and top with Parmesan and breadcrumbs.
7. Bake until bubbling and golden, about 25 minutes.
Tips
Windridge original. Squeeze extra moisture from the chard if it is very wet after wilting.
