Sweet Corn, Bean, and Sweet Pepper Succotash
A buttery skillet of sweet corn, beans, sweet peppers, and onion.

Ingredients
4 ears sweet corn, kernels cut off
12 oz beans, trimmed and halved
2 sweet peppers, diced
1 yellow onion, diced
2 tbsp butter
1 tbsp olive oil
1 clove garlic, minced
1 tbsp parsley
Salt and black pepper
Instructions
1. Blanch the beans briefly, then drain.
2. Heat the butter and oil in a skillet.
3. Cook the onion and sweet peppers for 4 minutes.
4. Add the beans, corn, and garlic.
5. Cook until the vegetables are tender but still bright.
6. Season and finish with parsley.
Tips
