Summer Squash and Zucchini Parmesan Bake
A layered bake with summer squash, zucchini, tomatoes, onion, and cheese.

Ingredients
1 lb summer squash, sliced
1 lb zucchini, sliced
2 tomatoes, sliced
1 yellow onion, sliced
1 cup marinara sauce
3/4 cup grated Parmesan
1/2 cup mozzarella
2 tbsp olive oil
1 tsp dried oregano
Salt and black pepper
Instructions
1. Heat the oven to 375F.
2. Toss the squash, zucchini, and onion with oil, oregano, salt, and pepper.
3. Layer half the vegetables in a baking dish.
4. Add half the sauce, tomatoes, and cheese.
5. Repeat the layers.
6. Cover and bake 25 minutes.
7. Uncover and bake 15 minutes more.
Tips
Windridge original. If your squash is very wet, salt it first and let it drain for 15 minutes.
