Stuffed Sweet Peppers with Tomatoes and Rice
Sweet peppers filled with rice, tomatoes, onions, and cheese.

Ingredients
4 sweet peppers, halved and seeded
1 cup cooked rice
2 tomatoes, chopped
1 yellow onion, diced
1 cup shredded cheese
1 tbsp olive oil
1 tsp Italian seasoning
Salt and black pepper
Instructions
1. Heat the oven to 375F.
2. Cook the onion in olive oil until soft.
3. Mix in the tomatoes, rice, seasoning, salt, and pepper.
4. Fill the pepper halves and top with cheese.
5. Bake until the peppers are tender and the filling is hot, about 30 to 35 minutes.
Tips
Windridge original. Add cooked beef or sausage if you want a much heavier version.
