Stewed Cauliflower, Tomatoes, and Onions

Ingredients

1 medium head cauliflower 1 medium onion 2 large tomatoes 1 tbsp vegetable oil 1/4 tsp garlic powder 1/2 tsp ground black pepper 1 tbsp dried parsley 1/4 cup Parmesan cheese, grated

Instructions

1. Chop the cauliflower into 2-inch pieces. 2. Peel and chop the onion and chop the tomatoes. 3. Cook the cauliflower in a saucepan with 1 inch of water for 3 minutes, then drain. 4. In a large pan, heat the oil and cook the onion for 3 to 5 minutes. 5. Add the garlic powder and cauliflower and cook while stirring for 3 minutes. 6. Add the tomatoes and pepper and cook 5 more minutes. 7. Sprinkle with parsley and Parmesan before serving.
