Smoky Eggplant and Tomato Stew
Eggplant, tomatoes, onion, and garlic simmered into a thick, smoky stew.

Ingredients
1 large eggplant, cubed
4 tomatoes, chopped
2 yellow onions, diced
3 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
1/2 cup water or broth
2 tbsp parsley
Salt and black pepper
Instructions
1. Heat the oil in a pot.
2. Cook the onions for 5 minutes.
3. Add the eggplant and cook until it begins to brown.
4. Stir in the garlic and spices.
5. Add the tomatoes and water.
6. Simmer for 20 minutes until the eggplant is tender and the sauce thickens.
7. Finish with parsley.
Tips
Windridge original. This is good over rice, with bread, or beside grilled meat.
