Roasted Hot Pepper Salsa
Roasted tomatoes, hot peppers, and onion blended into a bold salsa.

Ingredients
5 tomatoes, halved
2 hot peppers
1 yellow onion, wedged
3 cloves garlic, unpeeled
1 tbsp olive oil
Juice of 1 lime
1/4 cup cilantro
Salt to taste
Instructions
1. Heat the oven to 425F.
2. Roast the tomatoes, hot peppers, onion, and garlic with olive oil until lightly charred.
3. Peel the garlic.
4. Pulse everything with lime juice, cilantro, and salt until the salsa is as smooth as you like.
5. Chill or serve warm.
Tips
Windridge original. Start with one hot pepper if you want a milder batch.
