Roasted Beet, Radish, and Lettuce Salad
Roasted beets and radishes over lettuce with green onions and vinaigrette.

Ingredients
4 medium beets, peeled and wedged
1 bunch radishes, halved
1 head lettuce, torn
4 green onions, sliced
2 tbsp olive oil
2 tbsp goat cheese
For the dressing: 2 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tsp maple syrup, salt and pepper
Instructions
1. Heat the oven to 400F.
2. Roast the beets and radishes with olive oil, salt, and pepper until tender.
3. Whisk the dressing.
4. Arrange the lettuce on a platter.
5. Add the warm vegetables and green onions.
6. Drizzle with dressing and finish with goat cheese.
