Pumpkin and Bean Soup

A fast, filling soup made from pumpkin, white beans, onion, and warm spices.

Pumpkin and Bean Soup

Ingredients

1 can white beans 1 small onion, finely chopped 1 cup water 1 can pumpkin (15 ounces) 1 1/2 cups 100% apple juice 1/2 tsp cinnamon 1/8 tsp nutmeg, allspice, or ginger 1/2 tsp black pepper 1/4 tsp salt

Instructions

1. Blend or mash the white beans, onion, and water until smooth. 2. In a large pot, stir together the pumpkin, apple juice, cinnamon, nutmeg, black pepper, and salt. 3. Add the blended bean mixture to the pot. 4. Cook over low heat for 15 to 20 minutes, until warmed through. 5. Serve hot.
