Potato and Leek Soup
A classic leek soup with potatoes, onion, broth, and cream.

Ingredients
2 leeks, cleaned and sliced
1 yellow onion, chopped
4 medium potatoes, peeled and cubed
2 tbsp butter
4 cups broth
1/2 cup cream
Salt and black pepper
Instructions
1. Melt the butter in a soup pot.
2. Cook the leeks and onion until soft.
3. Add the potatoes and broth.
4. Simmer until the potatoes are tender.
5. Blend until mostly smooth.
6. Stir in the cream and season to taste.
Tips
