Pan-Seared Steak with Roasted Root Vegetables
Steak with roasted carrots and other root vegetables for a heavier supper.

Ingredients
2 steaks, about 1 inch thick
3 carrots, cut into chunks
2 parsnips, cut into chunks
1 sweet potato, cubed
3 tbsp olive oil
2 sprigs rosemary
3 cloves garlic
2 tbsp butter
Salt and pepper
Instructions
1. Heat the oven to 425F.
2. Roast the root vegetables with 2 tablespoons of olive oil, salt, and pepper for 30 minutes.
3. Season the steaks.
4. Sear them in the remaining oil until browned.
5. Add butter, rosemary, and garlic and baste briefly.
6. Rest and serve with the vegetables.
