Maple Pumpkin Soup
Roasted pumpkin soup with yellow onions and a touch of maple.

Ingredients
1 small pumpkin or 4 cups peeled pie pumpkins, cubed
2 yellow onions, chopped
3 cloves garlic, chopped
1 tbsp olive oil
4 cups broth
2 tbsp maple syrup
1/2 cup cream or coconut milk
1/2 tsp nutmeg
Salt and black pepper
Instructions
1. Heat the oven to 400F.
2. Roast the pumpkin with olive oil for 25 minutes.
3. Cook the onions in a soup pot until soft.
4. Add the garlic and nutmeg.
5. Add the pumpkin, broth, and maple syrup.
6. Simmer 10 minutes, then blend until smooth.
7. Stir in the cream or coconut milk and season to taste.
Tips
Windridge original. Roasting the pumpkin first makes a big difference in flavour.
