Kale, Spinach, and Green Onion Pasta
Pasta with kale, spinach, green onions, lemon, and Parmesan.

Ingredients
12 oz pasta
4 green onions, sliced
3 cups kale, chopped
3 cups spinach
3 cloves garlic, sliced
1/4 cup olive oil
1/2 tsp red pepper flakes
1 lemon
1/2 cup grated Parmesan
Salt and black pepper
Instructions
1. Cook the pasta and reserve some pasta water.
2. Cook the green onions, garlic, and red pepper flakes in the olive oil.
3. Add the kale and a splash of water and cook until it softens.
4. Add the spinach and cook until wilted.
5. Toss in the pasta, lemon zest, lemon juice, Parmesan, and enough pasta water to coat.
6. Season and serve.
