Heirloom Tomato Caprese
A simple caprese that lets ripe heirloom tomatoes do the work.

Ingredients
2 large heirloom tomatoes, sliced
200g fresh mozzarella, sliced
Fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze
Sea salt and black pepper
Instructions
1. Arrange the tomatoes and mozzarella on a platter.
2. Tuck basil between the slices.
3. Drizzle with olive oil and balsamic glaze.
4. Season with salt and black pepper.
5. Serve at room temperature.
Tips
Windridge original. This works best when the tomatoes are fully ripe and never refrigerated.
