Green Onion Omelet
A hearty skillet omelet with green onions, potatoes, ham, and tomatoes.

Ingredients
1 can low-sodium sliced potatoes, drained (about 15 ounces)
1 tbsp vegetable oil
1 whole egg
3 egg whites
3 tbsp 1% low-fat milk
1/4 tsp salt
1/2 cup ham, diced
1/2 can low-sodium tomatoes, drained (about 8 ounces)
1 tbsp green onions, chopped
Instructions
1. Open and drain the sliced potatoes, then cut them into strips.
2. In a large skillet over medium heat, lightly brown the potatoes in the oil for 5 to 10 minutes.
3. In a bowl, mix the egg, egg whites, milk, and salt.
4. Stir in the ham, tomatoes, and green onions.
5. Pour the egg mixture over the potatoes.
6. Cover the skillet and cook over medium heat until the eggs are firm and no longer runny, about 8 minutes.
7. Cut into 4 pieces and serve.
