Green Beans with Tomatoes and Basil
A skillet side dish of green beans, onions, tomatoes, basil, and parsley.

Ingredients
6 cups green beans (about 1 pound), ends snipped
1 tbsp olive oil
1 medium onion, finely chopped
1 can low-sodium tomatoes (14.5 ounces), drained and chopped
1 tbsp fresh basil or 1/2 tsp dried
1 tbsp fresh parsley or 1/2 tsp dried
Salt and pepper to taste, optional
Instructions
1. Cook the green beans in boiling water for 5 minutes so they stay a little crisp.
2. Drain and rinse under cold water, then set aside.
3. Heat the olive oil in a large frying pan over medium heat.
4. Add the onion and cook 2 to 3 minutes until softened.
5. Add the tomatoes, basil, and parsley and cook 3 minutes.
6. Stir in the beans and cook 5 to 6 minutes more.
7. Season to taste and serve.
