Garlic Scape Pesto
Bright, punchy pesto made from garlic scapes instead of basil alone.

Ingredients
1 cup garlic scapes, chopped
1/3 cup walnuts
1/2 cup grated Parmesan
1/2 cup olive oil
1 tbsp lemon juice
Salt and pepper
Instructions
1. Blanch the garlic scapes for 1 minute and drain.
2. Pulse the scapes and walnuts in a food processor.
3. Add Parmesan and lemon juice.
4. Stream in the olive oil until smooth.
5. Season to taste.
