Corn Chowder with Sweet Peppers and Potatoes
A thick corn chowder with potatoes, sweet peppers, onion, and cream.

Ingredients
4 ears sweet corn, kernels removed
2 sweet peppers, diced
1 yellow onion, diced
3 potatoes, peeled and cubed
2 tbsp butter
4 cups broth
1/2 cup cream
Salt and black pepper
Instructions
1. Melt the butter in a soup pot.
2. Cook the onion and sweet peppers until soft.
3. Add the potatoes, corn, and broth.
4. Simmer until the potatoes are tender.
5. Blend part of the soup to thicken it, leaving some chunks.
6. Stir in the cream and season to taste.
Tips
Windridge original. You can add cooked bacon or sausage if you want it even heavier.
