Broccoli and Corn Bake

A warm casserole-style side dish with broccoli, cream-style corn, and a crisp cracker topping.

Broccoli and Corn Bake

Ingredients

1 can cream-style corn, low-sodium (15 ounces) 3 3/4 cups broccoli, cooked 1 egg, beaten 1/2 cup cracker crumbs, crushed 1/4 cup vegetable oil For the topping: 6 saltine crackers, crushed and 1 tbsp butter or margarine, melted

Instructions

1. Heat the oven to 350F. 2. Mix the corn, broccoli, egg, cracker crumbs, and oil in a greased 1 1/2 quart casserole dish. 3. Mix the topping ingredients in a small bowl and sprinkle them over the casserole. 4. Bake for 40 minutes. 5. Serve warm.
