Bell Pepper Nachos

Bell Pepper Nachos

Ingredients

4 bell peppers, any color 1 cup salsa 2 tsp seasoning such as chili powder, garlic powder, cumin, and pepper 1 cup cooked chicken, chopped 1 cup cooked or canned beans, drained 3/4 cup cheddar cheese, shredded

Instructions

1. Heat the oven to 350F. 2. Wash the bell peppers, remove the seeds, and cut them into bite-size pieces. 3. Arrange the pepper pieces close together in a single layer on a foil-lined baking sheet. 4. In a bowl, combine the salsa, seasoning, chicken, and beans. 5. Spoon the mixture over the peppers and top with cheese. 6. Bake for 15 minutes, until the peppers are heated through and the cheese is melted. 7. Serve warm.
